What surfaces can I actually scan?

Pretty much anything. Walls, concrete, bark, leaves, fabric, tiles, wood grain, metal, stickers, posters, vintage book covers, magazine pages, if it has a surface, you can scan it. For uneven or organic surfaces like grass or branches, lay a clear sheet over the top and scan across that. Flat or rough, indoors or outdoors, it handles it all.
How good is the quality really?

At 900 DPI you're getting scans that are detailed enough to zoom right in and still see every crack, fibre, and grain. Most commercial texture packs are sold at lower resolutions than what this produces. You get three resolution settings, 300, 600, and 900 DPI, so you can choose based on how much detail you need. For most creative work, the quality will genuinely surprise you.
What happens when the memory card fills up?

The included 16GB card holds hundreds of scans, and the iScan supports cards up to 32GB. When it fills up, plug it into your laptop or phone, move your scans over, and start again. Most people build organised folders by location, date, or project, it becomes your personal texture library over time.
